Winter is officially here, the freezing weather outside makes soup the ultimate comfort food for this season. Making soup may seem intimidating but this is an easy, no-blender recipe that uses plenty of vegetables and is perfect for batch cooking.
Lohikeitto is a Finnish salmon, leek and potato soup seasoned with plenty of dill. This warming, nourishing recipe comes together quickly and is perfect for a cold winter day.
Ingredients
(Makes 2 Large Portions)
- 1 ½ Leeks
- 1 Salmon Fillet
- 1 Baking Potato
- 1 Carrot (or another vegetable, I used Cauliflower)
- 500ml of Vegetable Stock
- 100ml Double Cream
- Bunch of Dill
- Salt + Pepper
- Dash of Lemon juice
Method
- Prepare your vegetables by roughly chopping the leeks, potato and carrots into bite sized pieces.
- Heat vegetable oil in your pot and saute the leeks on a medium high heat until they reduce in size and become soft.
- Then boil 500ml of water, mix this with one stock pot/cube and add to the pot.
- Add the potato and veg and simmer until the potatoes are cooked through – for approximately 10-15mins.
- When cooked, reduce the heat and add 100ml of double cream with the salmon and the dill. Ensure the cream does not boil.
- Stir and cover for 5-10 minutes.
- Finally, season with pepper and optionally add a dash of lemon juice.
Tip! To preserve leftover fresh herbs, chop and add to an ice cube tray. Cover them with water, then simply defrost before use or add them to broth/hot water.
