Autumn Days Call For Spiced Apple Muffins

Tilly Bowen is back with the perfect autumnal recipe for those sweet treat cravings.

As the days get colder and the leaves turn a vibrant orange, I love nothing more than watching Gilmore Girls and making some autumnal treats.

In my garden at home we have an apple tree; we always have such an abundance of apples that I wanted to create a recipe that would incorporate them into my baking. Therefore, my recipe of choice this week is spiced apple muffins: a quick and easy crowd pleaser that encapsulates all the great autumn flavours.

12 spiced apple muffins recipe:

Ingredients:

  • Two medium apples
  • Cinnamon
  • Ginger
  • 45 g of brown sugar
  • 70g of caster sugar
  • 115 g of margarine
  • 115 g of self-raising flour
  • One medium egg

Method:

  • Preheat your oven to 180 degrees Celsius.
  • Peel your apples and cut them into small cubes and place them on the side.
  • Add your margarine and sugars to a mixing bowl and cream together until light and fluffy.
  • Then crack your medium egg into the bowl.
  • Measure out your flour and add your cinnamon and ginger in to taste.
  • Gradually add the flour into the bowl as you mix your egg in.
  • Then coat your apples in a dusting of flour so they don’t sink to the bottom of your muffins and mix them in using a spatula or wooden spoon.
  • Assemble 12 cases on a muffin tray and spoon in equal amounts of batter into the cases.
  • Bake for 20 minutes at 180.
  • Check the muffins at 15 minutes and sprinkle them with brown sugar.
