This hot chocolate was the nicest that we tasted during the hot chocolate tour, and I just had to recreate it! The coconut milk means that it’s not too sweet, and, best of all, is vegan. You can add any flavours that you want during step 2; I added some vanilla extract and cinnamon to give it a slight chai flavour, which worked well with the coconut flavour.
This recipe makes two large cups.
Ingredients
– 300ml coconut milk, if using tinned shake before opening, so you get a good consistency
– 200ml water
– 5 tsp cocoa powder
– 2 ½ tsp sugar
– any other flavours you fancy, e.g. ½ tsp vanilla extract, pinch cinnamon, grating of nutmeg, grated orange zest, caramel syrup, ½ tsp instant coffee etc.
Put the coconut milk and water into a saucepan and heat on medium until steaming, but don’t let it boil, or the coconut milk might curdle.
In a bowl, whisk together the cocoa powder, sugar and any additions with a splash of the hot milk until a paste is formed.
Pour the rest of the milk in and whisk until smooth and all the cocoa is mixed in.
Pour it back into the saucepan and heat again.
Drink in cute tea-cups with cake.
